Communication – staff and customers

It is vital to encourage anybody who may need to avoid a particular food to ask, and also that when they do ask, their questions are
understood and answered clearly.

Staff must understand how important it
is to tell the truth and not mislead. If in
doubt about a particular food, it is
safest for the customer to avoid it
completely.

In case a customer asks about the

ingredients of a meal, make sure there is

always someone on duty who knows

or can find out the ingredients of all the

foods you provide.

Remember that this will include

individual ingredients of all the foods,

sauces and seasonings you have used.


 

Top tip

Any oil that has previously been used to cook products containing nuts may contain traces of nut proteins.
